Sweet and Savory Apple Pancakes

These pancakes are soft, fluffy, and filled with warm, comforting flavor. Topped with tender apples cooked in butter, brown sugar, and a touch of cinnamon and spice, they bring together just the right balance of sweet and savory. Whether you’re making a special weekend breakfast or just want something a little extra during the week, this stack is a satisfying way to start the day.

Ingredients:

  • For the Pancakes:
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup milk
  • 1 egg
  • 2 tablespoons melted butter or oil
  • ½ teaspoon cinnamon
  • Optional: ¼ teaspoon ground nutmeg or cloves for extra spice
  • For the apple topping:
  • 2 apples, peeled and diced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • Pinch of ground cloves or star anise (or 1 whole star anise for visual appeal)
  • Optional: drizzle of honey or maple syrup

Instructions:

  1. Make the topping: In a skillet, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and spices. Cook until apples are soft and caramelized, about 5–7 minutes. Remove from heat and set aside.
  2. Mix pancake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. In another bowl, whisk together milk, egg, and melted butter. Combine wet and dry ingredients and stir until just mixed.
  3. Cook the pancakes: Heat a nonstick skillet or griddle over medium heat. Pour ¼ cup batter for each pancake. Cook until bubbles form and edges look dry, then flip and cook another 1–2 minutes. Repeat with remaining batter.
  4. Assemble and serve: Stack pancakes on a plate and spoon warm apple topping over the top. Drizzle with honey or maple syrup if desired. Serve warm and enjoy!
