Simply Salmon Salad

This light and flavorful salad brings together tender grilled salmon, crisp greens, and bright Mediterranean flavors like olives and lemon. It’s a heart-healthy, protein-rich dish that’s as easy to prepare as it is to enjoy, which makes it perfect for lunch or a light dinner.

Ingredients:

  • 2 salmon fillets (about 4–5 oz each)
  • 4 cups mixed greens or butter lettuce
  • ½ cup cherry tomatoes or sliced tomato wedges
  • ¼ cup sliced red onion
  • ¼ cup sliced green olives or black olives
  • Fresh parsley or dill for garnish
  • Lemon wedges for serving
  • Olive oil, salt, and pepper

Instructions:

  1. Grill the salmon: Season the fillets with olive oil, salt, and pepper. Grill or pan-sear over medium heat for 3–4 minutes per side, or until cooked through. Let rest, then flake or slice into chunks.
  2. Build the salad: In a large bowl or on plates, layer greens, tomatoes, onions, and olives.
  3. Add the salmon: Place the warm salmon over the salad.
  4. Dress and garnish: Drizzle with homemade lemon dressing (or your favorite vinaigrette). Garnish with fresh parsley and a lemon wedge.
  5. Serve immediately: Best enjoyed fresh, with a side of whole-grain bread or crackers.
