2 pounds small to medium Yukon Gold or red potatoes
Optional: sour cream or ranch dressing for dipping
Instructions:
Preheat Oven: Preheat your oven to 425°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Prepare the Potatoes: Wash and scrub the potatoes well. Cut them into wedges by slicing each potato in half, then cut each half into 3 to 4 even wedges depending on the size.
Season: In a large bowl, toss the potato wedges with olive oil, garlic, thyme, rosemary, oregano, salt, and pepper until evenly coated.
Roast: Spread the wedges in a single layer on the baking sheet, cut side down. Roast for 35 to 40 minutes, flipping halfway through, until golden brown and crisp on the edges.
