Golden Garlic Herb Potato Wedges

Crispy on the outside, tender on the inside, and packed with flavor, these garlic herb potato wedges are a classic side dish that never goes out of style. Perfect for pairing with almost any main course or enjoying on their own with a creamy dip.

Ingredients:

  • 2 pounds small to medium Yukon Gold or red potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (more to taste)
  • ½ teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh parsley (for garnish)
  • Optional: sour cream or ranch dressing for dipping

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes: Wash and scrub the potatoes well. Cut them into wedges by slicing each potato in half, then cut each half into 3 to 4 even wedges depending on the size.
  3. Season: In a large bowl, toss the potato wedges with olive oil, garlic, thyme, rosemary, oregano, salt, and pepper until evenly coated.
  4. Roast: Spread the wedges in a single layer on the baking sheet, cut side down. Roast for 35 to 40 minutes, flipping halfway through, until golden brown and crisp on the edges.
  5. Serve: Remove from the oven and sprinkle with fresh parsley if using. Serve warm with your favorite dipping sauce like sour cream, ranch, or garlic aioli.
