Crispy Fried Zucchini Sticks

These golden zucchini sticks are lightly seasoned, breaded, and fried until perfectly crisp. They make a great side dish, party snack, or light lunch, especially when paired with a creamy herb dip. Whether you’re serving guests or just treating yourself, this recipe is a tasty way to use fresh zucchini in a fun and flavorful way.

Ingredients:

  • 2 medium zucchini, cut into sticks
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (plain or seasoned
  • ¼ cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)
  • For Herb Dip:
  • ½ cup sour cream or plain Greek yogurt
  • 1 tablespoon chopped fresh dill or parsley
  • 1 green onion, finely chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare your dipping station: Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan in a third.
  2. Season the zucchini: Sprinkle zucchini sticks with a little salt and pepper.
  3. Bread the zucchini: Dip each stick in flour, then egg, then breadcrumb mixture, pressing lightly so the coating sticks well.
  4. Heat the oil: In a skillet, heat about ½ inch of oil over medium-high heat until shimmering.
  5. Fry the zucchini: Fry in small batches, turning to brown all sides evenly, about 2–3 minutes per side. Drain on paper towels.
  6. Make the herb dip: Mix sour cream, herbs, green onion, salt, and pepper in a small bowl. Chill until ready to serve.
  7. Serve warm: Enjoy the zucchini sticks fresh from the pan with dipping sauce on the side.
