Country Fried Bologna Melt

Crispy-edged, thick-cut bologna stacked high on toasted bread with cheese, crisp lettuce, and creamy sauces, this Kentucky classic brings bold flavor and old-school comfort in every bite.

Ingredients:

  • 2 to 3 thick slices of bologna (deli-style or jumbo cut)
  • 2 slices hearty sandwich bread (Texas toast, sourdough, or multigrain)
  • 1 slice cheddar or American cheese
  • 1 tablespoon mayonnaise
  • 1 tablespoon whole grain mustard (or yellow mustard)
  • 2–3 leaves of romaine or iceberg lettuce
  • 1 teaspoon butter (for toasting bread)
  • 1 sliced tomato

Instructions:

  1. Score and Fry the Bologna: Cut small slits around the edges of each bologna slice to prevent curling. Heat a skillet over medium heat and fry the slices for 2–3 minutes per side until browned and slightly crispy.
  2. Toast the Bread: Butter one side of each bread slice. Toast in the skillet until golden brown and crispy, about 1–2 minutes per side.
  3. Assemble the Sandwich: Spread mayonnaise on the bottom slice of bread. Add lettuce and tomato if using, then layer the fried bologna and cheddar cheese.
  4. Finish and Serve: Spread mustard on the top slice of bread and place it over the stack. Slice in half if desired and serve hot with chips or coleslaw.
