Southwestern Pepper Slaw

This Southwestern Bell Pepper Slaw is a fresh and colorful twist on a classic side dish. Made with crisp bell peppers, sweet corn, and a creamy seasoned dressing, it brings just the right amount of zest without being too spicy. It’s light, crunchy, and full of flavor, making it the perfect companion to barbecue, grilled chicken, or even a simple sandwich. Whether you’re hosting a backyard get-together or just looking for something new to make at home, this slaw adds a little sunshine to any plate.

Ingredients:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup sweet corn (fresh, frozen, or canned and drained)
  • ¼ red onion, thinly sliced (optional)
  • 2 tablespoons chopped fresh cilantro or parsley
  • ½ cup shredded Monterey Jack or cheddar cheese (optional)
  • ½ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Pinch of chili powder (optional, for a mild kick)

Instructions:

  1. In a large bowl, combine the sliced bell peppers, corn, onion (if using), cilantro or parsley, and shredded cheese.
  2. In a small bowl, whisk together the mayonnaise, sour cream, lime juice, cumin, garlic powder, salt, pepper, and chili powder if using.
  3. Pour the dressing over the slaw ingredients and toss until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes to let the flavors come together.
  5. Serve chilled and enjoy!
