Ingredients:
4 Small corn or flour tortillas
4 Eggs
½ cup cooked chorizo (mild or spicy)
½ cup pico de gallo (or chopped tomato, onion, and cilantro)
¼ cup crumbled cheese (like queso fresco or feta)
2 Tablespoons fresh cilantro (optional)
1 Tablespoon oil or butter
1 Lime wedges for serving
Instructions:
Cook the chorizo: In a skillet over medium heat, cook the chorizo until browned and fully cooked (about 6–8 minutes). Set aside and keep warm.
